Berry breakfast quick bread

Tuesday night I was putting together my lunch for my weekly business trip. I realized I had nothing for breakfast. A quick glance in the refrigerator turned up a container of blackberries I bought at the Poulsbo Farmer’s Market last week. I put together my favorite fast quick bread.

Mix dry ingredients:
1 1/2 cups flour
3/4 cup sugar
1 tbs. baking powder

Put these in a plastic container and shake them together.

Mix wet ingredients:
1 egg
1/2 cup milk

Whisk these together.

Combine:
Melt 2 tbs. of butter. Use a pastry brush to brush some of the melted butter on an 8×8 Pyrex pan and sprinkle the bottom of the pan with 1/4 cup brown sugar. Whisk the rest of the butter in with the wet ingredients. Fold the dry mix into the wet mix, then add 1 cup blackberries (or other fruit – blueberries work really well!), making sure not to overwork the flour.

Bake:
Bake in 350 oven’ for 50 minutes or until a toothpick comes out clean.
