Perfect rice – don’t lift the lid!

Cooking rice in stock gives a lot of flavor to the rice. Bring 2 cups of stock or water to a boil. (This is a great way to test your old chicken stock, if it doesn’t smell right when you heat it then toss it and use water.) Add 1 cup rice. Stir and immediately turn to low. If it starts to boil over again, stir again. Cover and let simmer for 15 minutes without stirring again.

At the 15 minute mark take the rice off the heat and let it sit for 5 minutes. You’re done! Pile on vegetables, chicken or pork, or have on the side of any main dish.
