Herbed Onion Cheese Bread


Quick and easy accompaniment for any soup or stew.

Prep:
Onion – one medium yellow. Chop, saute in a little butter, and set aside.
Cheese – grate 1/2 cup of strong cheese, like Beecher’s Flagship.

Dry ingredients:
1 1/2 cups AP
3 tsp baking powder
1 tsp salt

Whisk these together.

2 tbs butter – cut these into small pieces and cut into the dry ingredients with a pastry cutter.

Spice – add 1 tsp of a dried herb: oregano, thyme, and rosemary are all good candidates. Dill is my favorite.

Wet ingredients:
1 egg – whisk (a fork will do.)
1/2 cup milk – add to the egg.

Mix:
Pour the wet ingredients into the dry ingredients and mix just a few times until moistened. Add the onion and turn a few times to mix in.

Bake:
Turn the dough into an 8×8 greased pan. Sprinkle the cheese on top.

Bake at 400′ for 25 minutes.
