Every year I pack a small bag of fresh herbs and something baked for my next-door neighbors. This year I made a small loaf of applesauce quick bread – a good way to use up the applesauce!
This recipe is adapted from Taste of Home.
- 3 eggs, beaten
- 1 1/4 cups applesauce
- 1/4 cup oil
- 1/2 cup white sugar
- 1/4 cup brown sugar
Mix these until blended. I just used a wooden spoon.
- 2 cups white flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. allspice
Whisk these until blended.
Mix the wet ingredients into the dry ingredients just until the larger lumps are gone.
Divide evenly among small loaf pans (I made five – four for the neighbors and one for me to make sure they came out right!)
Bake at 350′ for 30 minutes or until done. Cool on wire rack.
