Vinegar is both a cooking ingredient and a cleaner. We stock gallons of white vinegar for washing down counters and refrigerator. (We use bleach in water on counters too). In the kitchen I keep a variety of vinegars for use in vinaigrette for salad. Balsamic vinegar works in both vinaigrette and in roasting vegetables.
Olive oil: extra virgin from California for vinaigrette, can’t get enough bottles of this! Commercial for sauteing.
Grapeseed oil: for frying, as it has a higher smoke point than olive oil.
For balsamic, olive oil and grapeseed oil, we keep one large bottle in the kitchen and one in the pantry.
